Holiday Recipe #5 | Blueberry Yogurt Parfait

Blueberry Yogurt Parfait (serves 4)

Ingredients:

  • 2 cups low-fat plain yogurt
  • 2 cups fresh sliced berries of choice (strawberries, raspberries, blueberries etc.)
  • 1 cup granola
  • 2 tbsp honey

Directions:

  1. Layer 2 spoonfuls of yogurt, each into 4 separate serving cups. Add a layer of granola as well as a layer of berries on top.
  2. Repeat layering the yogurt, granola, and berries, and drizzle some honey in between the layers to taste.

Holiday Recipe #4 | Healthy Popcorn

Healthy Popcorn

Ingredients:

  • 3 tbsp high smoke point oil (canola, peanut, coconut)
  • ½ tsp salt
  • ½ cup corn kernels

Directions:

  1. Place oil, salt, and 3 corn kernels into a 3-quart saucepan over medium-high heat. Cover and cook until all 3 kernels pop.
  2. Remove the three kernels from the pan and add the rest of the kernels into the pan. Cover and cook, shaking occasionally until the popping stops.
  3. Remove from heat and add butter or spices to taste.

Holiday Recipe #3 | Chewy Buttermilk Biscuits

Chewy Buttermilk Biscuits (Yield: 14 biscuits)
The less you knead the dough, the lighter it is!

Ingredients:

  • 2 cups flour
  • 2½ tsp baking powder
  • ½ tsp salt
  • 5 tbsp chilled butter, cut into small pieces
  • ¾ cup fat-free buttermilk
  • 3 tbsp honey

Directions:

  1. Preheat oven to 400ºF.
  2. Combine flour, baking powder, and salt in a large bowl. Add butter and and cut using a pastry blender until it is fully incorporated. Place in the refrigerator to chill for 10 minutes.
  3. In a separate bowl, whisk together the buttermilk and honey until well blended. Combine the wet and dry ingredients, stirring just until it is fully incorporated.
  4. Place dough on a lightly floured surface and dust lightly with additional flour. Roll out until it is ½ inch thick and then fold it into thirds. Dust surface of dough lightly with flour again and re-roll until it is ½ inch thick. Lastly, fold into thirds again and roll out the dough until it is now ¾ inch thick.
  5. Cut biscuits using a ¾ inch biscuit cutter. Place biscuits onto a baking tray lined with parchment paper and bake for 12 minutes or until golden brown.

Holiday Recipe #2 | Creamy Tomato Soup

Creamy Tomato Soup (4 servings)

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 28 ounce canned peeled whole tomatoes (approx. 800 grams)
  • 1½ cups low-sodium chicken broth or water
  • ⅓ cup heavy cream

Directions:

  1. In a medium sized pot, heat the oil under medium-high heat. Add onions and garlic and saute for about 5 minutes or until soft.
  2. Add the entire can of tomatoes, undrained, into the pot. Crush the tomatoes using the wooden spoon and cook until broken down and tender, for about 10 minutes. Add chicken broth and bring to a simmer until tomatoes are broken down, for about 15 minutes.
  3. Remove from heat and let cool for about 10 minutes. Using either a blender or hand blender, puree the soup until completely smooth.
  4. Return to low heat and add in heavy cream. Add salt and pepper to taste and additional garnishes such as fresh basil or parmesan cheese before serving.

Holiday Recipe #1 | Egg & Cheese Muffins

Egg and Cheese Muffins (Yield: 12 Muffins)
Refrigerate up to a week or freeze for a month

Ingredients:

  • 12 eggs
  • ½ tsp salt
  • butter or nonstick cooking spray to coat pan
  • 1 cup spinach (frozen or fresh)
  • 1 cup mushrooms, thinly sliced
  • ¼ cup green onions, thinly sliced
  • 1 cup shredded cheese

Directions:

  1. Preheat oven to 350ºF.
  2. In a large bowl, whisk together the eggs and add the salt.
  3. Coat the muffin tin with cooking spray. Separate each of the vegetables and cheese into the muffin tray.
  4. Pour egg mixture into the muffin tray over the vegetables and cheese, leaving a ¼ inch space from the brim.
  5. Bake for 20-25 minutes, until the egg is cooked fully through to the center. Let rest for a few minutes before removing from tray.
